ABOUT ME….
I’m Carl Cleghorn, an award-winning private chef with over 24 years of experience working at the highest levels of hospitality. Throughout my career, I have had the privilege of cooking in some of the UK’s most respected kitchens, leading award-winning teams, achieving prestigious accolades, and most recently representing Wales on Great British Menu 2026 while also becoming a National Chef of the Year Finalist.
However, Tyme by Carl Cleghorn wasn’t created because of awards. It was created because I believe food has the power to bring people together and create lasting memories.
Some of my favourite moments in life have been spent around a table with family and friends, celebrating milestones, sharing stories, and enjoying great food. After years of working in luxury hotels, Michelin-starred environments, and award-winning restaurants, I wanted to bring that same level of dining directly into people’s homes and private events.
That vision became Tyme by Carl Cleghorn – a luxury private chef service delivering bespoke fine dining experiences across Wales, Bristol, Bath, London, the South West, and throughout the UK.
Every event I cater is completely tailored to you. Whether you’re planning an intimate dinner party, private celebration, birthday, anniversary, wedding, corporate event, luxury retreat, or exclusive tasting menu experience, my goal is always the same: to create exceptional food and unforgettable moments for you and your guests.
Over the past two decades, I have built my career in some of the country’s most respected establishments, including The Manor House, Castle Combe, The Olive Tree Restaurant in Bath, and Thornbury Castle, where I was Executive Chef. During my time at Thornbury Castle, I secured the property’s first-ever 3 AA Rosettes for culinary excellence, helped achieve a prestigious 4 Red Star rating, and played a key role in gaining membership to Relais & Châteaux.
One of the proudest moments of my career came when I was selected to represent Wales on Great British Menu 2026. To be chosen to compete on one of the UK’s most respected culinary competitions was an incredible honour and an opportunity to showcase my craft, creativity, and passion for food on a national stage. As a proud Welsh chef, it was a privilege to celebrate Welsh produce, Welsh stories, and the talent that exists within our hospitality industry.
Alongside Great British Menu, becoming a National Chef of the Year Finalist remains one of my most significant professional achievements. Competing amongst the country’s finest chefs pushed me to new levels of creativity, precision, and innovation, values that continue to shape every dining experience I create today.
At the heart of my cooking is a commitment to seasonality, sustainability, and exceptional ingredients. I work closely with trusted suppliers and local producers, sourcing the finest ingredients available while ensuring the highest standards of quality and food safety.

My style of cooking is rooted in modern British cuisine, influenced by flavours from around the world. I believe great food should be elegant without being pretentious, refined yet approachable, and always centred around flavour. Every menu is bespoke, designed specifically around your event, your preferences, and the best ingredients available at that moment in time.
Whether I’m cooking for two guests in a private home, hosting a tasting menu for ten, catering a wedding celebration, or delivering a corporate dining experience, my philosophy remains unchanged: exceptional ingredients, refined cooking, personal service, and unforgettable moments shared around the table.
